A tasty and healthy keto-friendly dish with roasted asparagus and herb-crusted salmon that is all cooked in one pan for easy cleanup.
Ingredients:
- 4 salmon fillets
- 1 bunch asparagus, trimmed
- 2 tbsp olive oil
- 2 tbsp fresh parsley, chopped
- 2 tbsp fresh dill, chopped
- 2 cloves garlic, minced
- 1 tsp lemon zest
- Salt and pepper to taste
Instructions:
Get the oven ready by heating it up to 400F 200C
Add the garlic, lemon zest, salt, and pepper to a small bowl
Then add the olive oil and mix it all together
On a baking sheet that has been lined with parchment paper, put the salmon fillets and the asparagus
Spread the herb mix out on the salmon and asparagus by brushing it on
Put it in the oven for 12 to 15 minutes, or until the salmon is done and the asparagus is soft
Serve hot, and if you want, top with more fresh herbs
