Ingredients:
- 1 lb shrimp, peeled and deveined
- 2 tbsp red curry paste
- 1 can 13
- 5 oz coconut milk
- 1 red bell pepper, sliced
- 1 small onion, sliced
- 2 cloves garlic, minced
- 1 tbsp ginger, minced
- 1 tbsp coconut oil
- 1 tbsp fish sauce
- 1 tbsp lime juice
- Fresh cilantro, for garnish
- Salt and pepper to taste
Instructions:
Put coconut oil in a large pan and heat it over medium-low heat
Put in the minced garlic and ginger, and cook until the smell is nice
I added red bell pepper and onion slices and cooked them until they got soft
Add red curry paste and stir
Cook for one to two minutes
