Ingredients:
- 200g pasta penne or spaghetti
- 100g chorizo, sliced
- 200g prawns, peeled and deveined
- 2 cloves garlic, minced
- 1 small onion, finely chopped
- 1 red bell pepper, diced
- 1 can 400g diced tomatoes
- 1 teaspoon paprika
- 1/2 teaspoon dried oregano
- Salt and black pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions:
Follow the directions on the package to cook the pasta
Remove the water and set it aside
Warm up the olive oil in a big pan over medium-low heat
When you add the chopped onion and minced garlic, saut until the onion softens
Put in the chorizo slices and cook until the oil starts to come out of them
After you add the diced red bell pepper, cook for two more minutes
Add the prawns and stir them in
Cook for about 34 minutes, or until they turn pink
Mix in the tomato slices and add the paprika and oregano on top
Add pepper and salt to taste
Allow the sauce to cook slowly for five minutes so that the flavors can mix
Toss the cooked pasta in the pan until it is well mixed and hot all the way through
Before serving, sprinkle with fresh parsley
