Mocha Espresso Coffee Cake With Pecan Streusel and Vanilla Glaze



The rich flavors of mocha and espresso come together in this delicious coffee cake. It goes well with coffee in the morning because it has a pecan streusel topping and a sweet vanilla glaze. Enjoy this treat when you wake up!

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 2 tablespoons instant espresso powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 1/2 cup semisweet chocolate chips
  • 1/2 cup chopped pecans

Instructions:

Warm up the oven to 350F 175C and grease a 9x9-inch 23x23 cm baking pan

Mix the cocoa powder, instant espresso powder, baking powder, baking soda, and salt in a bowl with a whisk

Put away

Melt the butter and mix it with the sugar in another bowl until the mixture is light and fluffy

One at a time, add the eggs and vanilla extract to the butter and sugar mixture, making sure to mix well after each addition

Slowly add the dry ingredients to the wet ones, mixing them in with the sour cream every so often

Start with the dry ingredients and end with the wet ones

Don't mix any further than that

The chopped pecans and semisweet chocolate chips should be carefully mixed in

Spread out the batter in the baking pan that has been prepared

Set aside 2 tablespoons of cold butter and 1/4 cup of all-purpose flour

In a bowl, mix together 1/4 cup of granulated sugar, 1/4 cup of chopped pecans, and 1/4 cup of all-purpose flour

Mix with a fork or your hands until it's crumbly

The streusel should be put on top of the cake batter

After the oven is hot, bake it for 30 to 35 minutes, or until a toothpick stuck in the middle comes out clean

Mix 1/2 cup of powdered sugar with 1-2 tablespoons of milk until you get the consistency you want for the vanilla glaze while the cake cools

Pour the vanilla glaze over the coffee cake that has already cooled

Cut your Mocha Espresso Coffee Cake with Pecan Streusel and Vanilla Glaze into pieces and serve them
