Mashed potato cakes are a delightful way to use up leftover mashed potatoes. They are crispy on the outside and creamy on the inside, making them a perfect side dish or snack.
Ingredients:
- 2 cups mashed potatoes
- 1/2 cup grated cheese
- 1/4 cup chopped green onions
- 1/4 cup breadcrumbs
- 1 egg
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions:
In a bowl, combine mashed potatoes, grated cheese, chopped green onions, breadcrumbs, egg, salt, and pepper
Mix well until all ingredients are fully incorporated
Divide the mixture into equal portions and shape them into patties
Heat olive oil in a skillet over medium heat
Carefully place the potato patties into the skillet and cook until golden brown on each side, about 3-4 minutes per side
Once cooked, remove from the skillet and place on a paper towel-lined plate to absorb excess oil
Serve hot and enjoy!
