Ingredients:
- 1 cup almonds
- 1/2 cup dried bananas
- 1/4 cup cocoa powder
- 1/4 cup unsweetened shredded coconut
- 1/4 cup Medjool dates
- 2 tablespoons almond butter
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions:
In a food processor, pulse almonds until finely chopped
To the food processor, add the dates, almond butter, cocoa powder, shredded coconut, dried bananas, vanilla extract, and a dash of salt
Process until the mixture begins to bind together and take on the consistency of sticky dough
After taking the mixture out of the food processor, use your hands to form it into bite-sized balls
Transfer the almond chocolate banana bites to a plate or tray lined with parchment paper
For the bites to get firmer, refrigerate for a minimum of half an hour
For a quick and healthful snack, store in the refrigerator in an airtight container
